Heat a little oil over a low heat in a large saucepan and stir in the onion and celery.

Add the garlic thyme and remaining ½ teaspoon salt and ½ teaspoons ground pepper. Cover and simmer for 35 minutes. Dice up the chicken and add to the vegetables fry for another couple of minutes.

Remove meat from bones. Add 750ml chicken stock. Dice a large carrot slice a trimmed leek and cook in the oil with a chopped onion for 6-7 minutes.

Cook for 1 minute. Cover and cook on. Tear the leftover chicken into bite-size pieces and add to the broth.

Heat the oil and cook the onion over a medium heat until starting to soften. Place the chicken in a large saucepan with the remaining stock ingredients. Set chicken aside until cool enough to handle.

Bring to a boil then reduce. Hulled barley can take 20 to 25 minutes longer to cook than pearl and will absorb less liquid. Simmer and add the pearl barley.

Stir in the pearl barley chicken broth and diced tomatoes. Season with salt and pepper Bring the broth to a boil then simmer for about 45mins to 1 hour until the pearl barley is soft. Pour in the chicken stock and water and add the thyme bay leaves pearl barley and dried porcini.

In a large stockpot cook chicken in water until tender. Discard bones and cut meat into cubes. The type of barley youll need for this recipe depends on what cooking method you use.

Cool broth and skim off fat. Bring to the boil and simmer gently for 5 minutes before adding the pearl barley shredded chicken and parsley. Remove chicken onto a plate and let it cool for half an hour.
